Guinness but not as we know it?

I was with a group of friends and we decided a pint was the order of the day. Wandering into this country pub one of our number requested a pint of Guinness. Usually that would not be an unusual occurrence. The pump was there but the publican reached into a chiller cabinet, took out a big can marked Guinness and poured it into a straight glass
It looked decidedly flat but then he took the can to the pump, dropped a small amount of water on to the stand and placed the glass on this. Pressing a button the beer performed the same swirling movement that Guinness does when poured correctly. In a few moments the creamy head appeared and the brown began to change to black.
My friend said it wasn't a bad pint, he's had better but what no-one could understand is the process where canned beer, without an obvious "widget" is turned into a reasonable version of draught beer.
Does anyone know how this works?

Did he utter any particular incantations during this process? Could it have been magic?

Well the gentleman who owned the pub came from Kenya, one of the Kenyan Asians and a really lovely chap. No-one mentioned magic of any kind which puzzled everyone even more.

Its called a surger and you can get a home model and they work with ultrasound, but you have to buy the special surger cans of Guinness, which are not easy to find.

The video shows that it takes quite a long time for the drink to settle with a head. I wouldn't be able to wait that long.
