I am looking for information about the original type of veneer used, how much area is required etc, and good source.

There are quite a number of veneer suppliers on the 'net - and the quantity you need is the area as measured for each piece.

Usually, Walnut is used as a veneer on flat vertical facings such as the dashboard, with the horizontal faces of the dash and door capings in the natural wood.

Remember though, the dash will be what is known as "mirror finish" which means it is done by using two iidentical sheets of veneer appled as if folded out left and right from the centerline.
