Can anyone explain why I see 3x flange gaskets in a lot of kits these days?
What I am supposed to be doing with the 3rd gasket, is it a spare...

Hello,
I think that is probably the case, it costs peanuts to produce them hence the "throw an extra one in" strategy.
There are the odd occasions when mating surfaces are poor and an additioanl gasket can, in the short term, solve the issue until the problem is rectified fully.

Many 6 cylinder cars had 3 carbs just a generic set
Owner since the 70's, Genghis is slightly to my left.

On a slight tangent, as the point re the 3 gaskets seems to have been covered, and I was some while ago going to comment on what I found when fitting new gaskets to my SPs carbs. (see the picture). I have no idea why the main block spacer had cut-outs and as can be seen the other gaskets were gradually being eaten into, I have since fitted all new blocks and gaskets - it just seemed a bit odd, maybe designed for another application, or just what the previous owner had in his garage.

The third gasket ist used with cars having a heat shield fitted between inlet manifold and carbs, i.e. Austin-Healey 6 cylinders.
